Oh, how I’ve missed our kitchen chats! Has it truly been a whole week? The days have a way of swirling by up here, especially when I find myself caught up in a project or two (I promise, more on that another time). But today, let’s settle in with a warm oven, a cheerful heart, and something sweet—because I have a new recipe and a rather intriguing letter to share. 🍋💌
A Taste of Summer: North Pole Lemon Bars
It’s a little-known secret, but even in August, we love a burst of citrus here at the North Pole. August in the North Pole looks much like Dec but there is a summer feeling from the sun. These North Pole lemon bars are the kind of treat that can brighten even the foggiest morning. They’re a favorite among the elves, and Santa claims they remind him of sunshine (even if he never seems to mind a little snow). ❄️
North Pole Lemon Bars Recipe
Simple, sweet, and tangy—a bit like life at the top of the world.
Ingredients:
- 1 cup unsalted butter, softened
- 2 cups all-purpose flour
- 1/2 cup powdered sugar (plus more for dusting)
- 2 cups granulated sugar
- 4 large eggs
- 1/3 cup fresh lemon juice (about 2 lemons)
- 2 tablespoons lemon zest
- 1/4 cup all-purpose flour
- Pinch of salt
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a bowl, combine 2 cups flour, 1/2 cup powdered sugar, and softened butter. Mix until crumbly, then press evenly into the bottom of your pan.
- Bake the crust for 18–20 minutes, until lightly golden.
- While the crust bakes, whisk together granulated sugar and eggs until smooth. Add lemon juice, lemon zest, 1/4 cup flour, and a pinch of salt. Mix well.
- Pour the lemon mixture over the hot crust. Return to oven for 20–22 minutes, until the filling is set.
- Let cool completely, then dust generously with powdered sugar and cut into squares.
- (Optional: Hide a few for yourself before the elves find them!)
Tip from Mrs. Claus:
If you want extra tang, add a little more zest—or try a mix of lemon and orange for a North Pole twist. 🍊
A Letter That Made Me Smile
Now, on to the fun part! As you know, my mailbox is always open—sometimes it’s filled with requests for cookie recipes, sometimes with questions about sleigh repairs, and sometimes…well, sometimes there are surprises.
Today, I found this charming little note, unsigned except for the curious name: “Faithful in Flannel.” I’ll admit, it made me smile (and scratch my head a bit):
