Back in My Cozy Kitchen: Letters, Lemon Bars, and a Mysterious Note
Mrs. Claus Blog: Life With Santa ā August 13th
My darlings,
Oh, how Iāve missed our kitchen chats! Has it truly been a whole week? The days have a way of swirling by up here, especially when I find myself caught up in a project or two (I promise, more on that another time). But today, letās settle in with a warm oven, a cheerful heart, and something sweetābecause I have a new recipe and a rather intriguing letter to share. šš
A Taste of Summer: North Pole Lemon Bars
Itās a little-known secret, but even in August, we love a burst of citrus here at the North Pole. August in the North Pole looks much like Dec but there is a summer feeling from the sun. These North Pole lemon bars are the kind of treat that can brighten even the foggiest morning. Theyāre a favorite among the elves, and Santa claims they remind him of sunshine (even if he never seems to mind a little snow). āļø
North Pole Lemon Bars Recipe
Simple, sweet, and tangyāa bit like life at the top of the world.
Ingredients:
- 1 cup unsalted butter, softened
- 2 cups all-purpose flour
- 1/2 cup powdered sugar (plus more for dusting)
- 2 cups granulated sugar
- 4 large eggs
- 1/3 cup fresh lemon juice (about 2 lemons)
- 2 tablespoons lemon zest
- 1/4 cup all-purpose flour
- Pinch of salt
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a bowl, combine 2 cups flour, 1/2 cup powdered sugar, and softened butter. Mix until crumbly, then press evenly into the bottom of your pan.
- Bake the crust for 18ā20 minutes, until lightly golden.
- While the crust bakes, whisk together granulated sugar and eggs until smooth. Add lemon juice, lemon zest, 1/4 cup flour, and a pinch of salt. Mix well.
- Pour the lemon mixture over the hot crust. Return to oven for 20ā22 minutes, until the filling is set.
- Let cool completely, then dust generously with powdered sugar and cut into squares.
- (Optional: Hide a few for yourself before the elves find them!)
Tip from Mrs. Claus:
If you want extra tang, add a little more zestāor try a mix of lemon and orange for a North Pole twist. š
A Letter That Made Me Smile
Now, on to the fun part! As you know, my mailbox is always openāsometimes itās filled with requests for cookie recipes, sometimes with questions about sleigh repairs, and sometimesā¦well, sometimes there are surprises.
Today, I found this charming little note, unsigned except for the curious name: āFaithful in Flannel.ā Iāll admit, it made me smile (and scratch my head a bit):
Dear Mrs. Claus,
Thereās a gentle magic in the way your kitchen smells of cinnamon and hope, even on a Tuesday morning. The elves talk about your lemon bars like theyāre a rare treasure, and rumor has it your stories are the real secret ingredient. I may be a simple North Poler, but you inspire me to look for warmth in the worldāone cookie at a time.
Thank you for reminding us all to find joy in the little things.
ā Faithful in Flannel
Isnāt that just the loveliest note? Whoever you are, Faithful in Flannel, you certainly brightened my day. (And if you ever want to come by for a lemon bar, Iāll make a fresh batchājust for you.) š
Inspired by You, My Darlings
My darlings, I hope you know that each of you inspires me as well, whether youāre baking, writing, or simply finding little ways to make the world warmer. If you have a question, a story, or even a recipe to share, my kitchen doorāand my heartāare always open.
With love (and a little powdered sugar on my apron),
Mrs. Claus
P.S.
